Gingerbread Cookies

INGREDIENTS:

1 ½ heaped cups almond flour

1/3 cup maple syrup

1/3 cup coconut oil, melted

3 tbsp brown rice flour

½ tsp baking soda

1 tbsp ground ginger

1 ½ tsp Ceylon cinnamon

½ tsp nutmeg

  1. Preheat oven to 160 C.

  2. In a medium bowl mix all ingredients until well combined.

  3. Roll into balls (size preferred) and flatten them slightly on a tray lined with baking paper. They will expand a little.

  4. Bake for approx. 12 minutes.

  5. Decorate with some dark melted chocolate and sprinkles of choice once cooled or icing.
