Cottage Cheese Muffins

INGREDIENTS:

1 cup cottage cheese

1 ½ cups spelt flour

2 eggs

½ banana

½ cup milk of choice

2 tsp baking powder

2 tbsp maple syrup

¼ cup dark chocolate chips

  1. Preheat oven to 175 C.

  2. Blend all ingredients except for the chocolate chips in a high-speed blender (don’t overmix).

  3. Stir in the chocolate chips.

  4. Pour the batter into mini muffin molds about ¾ full and bake for approx. 20-25 minutes.
